Many soba / udon shops in Japan offer a variety of toppings such as tempura, chicken and grated yam.
Some shops offer Sansai as a topping. Sansai refers to vegetables that naturally grow in the mountains or in the wild. However, only a few farmers cultivate them.
If you are a vegetarian the sansai udon / soba is a good choice but the broth is usually made from fish and kelp.
One popular Sansai is Warabi わらび, which is an edible fern (bracken shoot).
Warabi わらび has a little bitter taste and unique flavor.
Pre-cooked Sansai is sold at supermarkets.
