* Soshu Benirakumi 総州 紅楽美 is a brand chicken in Japan.
This plate is made of rock salt. First, rob the meat on the rock salt.
Then, dip the meat in ponzu sauce with liver paste. (It is 特製肝ぽん酢 Tokusei-kimo-ponzu)
This dish tastes like fish sashimi but it is a little chewy.

One of the most popular mushrooms in Japan is the Shiitake Mushroom (しいたけ, 椎茸), but it is less common in other countries.
Its flavor is unique and rather strong, so some kids and picky eaters don't like it. It's tasty. I've liked it since I was kid, but my sister still doesn't like it, even as an adult.
